Shimizu Seizaburo Shoten calls Suzuka home — a city in Mie Prefecture known for the Formula 1 Grand Prix, and for centuries, for exceptional sake. The ancient underground water of the Suzuka Mountains flows clean and pure into every bottle of ZAKU. Ranked #1 in the World Sake Brewery Rankings in 2019 and consistently top 5 ever since, ZAKU is built on one philosophy: sake exists to serve the meal. The name ZAKU – meaning "to make together" – reflects the belief that sake's true value is created by the brewer, the server, and the drinker alike. The logo mark, Yurimizu-Hishi, is a symbol of flowing water: three interlocking forms representing those who make, share, and savour the sake.

ZAKU is brewed in small fermentation tanks, allowing precise daily control of each batch. Every detail – temperature, koji, yeast – is monitored by hand and by instinct. The goal: ultimate clarity and a clean, refined finish.
ZAKU carries the GI Mie designation, a protected geographical indication recognising sake brewed in Mie Prefecture using its exceptional local water and rice. Mie has been known as Miketsukuni, "the land of offerings," since ancient times.
