Founded in 1873 in Miyagi Prefecture, Niizawa Brewery has pursued a single philosophy: sake exists to serve the meal. Ranked #1 in the World Sake Brewery Rankings for four consecutive years (2022–2025) and named IWC Sake Brewer of the Year four times running, the brewery stands at the pinnacle of the sake world — driven not by tradition alone, but by relentless improvement.
In 2018, Nanami Watanabe became toji at just 22 — the youngest female toji in Japan at the time. At Niizawa, brewing is a collaborative craft: every brewer, regardless of age or background, contributes to the pursuit of excellence.

Niizawa pioneered flat rice polishing (henpei polishing), achieving the world's highest polishing ratio of 0.85%, which is far beyond the industry standard of 70%. This technique removes unwanted flavors while preserving the rice's natural umami. Every bottle is stored at −5°C, from the brewery to your glass.
