Through the collaboration with the fine spirits specialist Jean Paul Metté and the import of distillation apparatus for grappa, brandy and calvados from Europe in recent years, the shochu has been refined based on the traditional distillation technique. A blend of 70% indirect distillation and 30% authentic shochu distillation using direct distillation. This method imparts aromas of delicately steamed sweet potatoes, marshmallows, and a light floral note. Elegant, very complex, with a long, slightly sweet finish.
