Through the collaboration with the fine spirits specialist Jean Paul Metté and the import of distillation apparatus for grappa, brandy and calvados from Europe in recent years, the shochu has been refined based on the traditional distillation technique. A blend of 24% distillation by indirect heating and 78% authentic shochu distillation by direct heating. This gives it a citrusy aroma of steamed sweet potatoes and a subtle floral nuance. The fine texture culminates in a pleasantly sweet finish.
