The elegant ('miyabi') aroma is the result of controlled production in small batches at low temperatures. It's no coincidence that the city of Suzuka was nicknamed umasake ("where good sake is brewed") early on. Distinctively floral aroma (lilies, violets), a hint of vanilla, subtle sweetness (icing sugar), pleasant umami taste with a slightly bitter finish reminiscent of grapefruit.
