Founded over 100 years ago in Wakayama Prefecture, known as the birthplace of sushi, Kokonoe Saika, one of Kishu's leading breweries, has its roots in red vinegar, brewed in large wooden barrels over 2 meters high.

They continue the time-consuming and labor-intensive traditional method of aging their own homemade sake lees for over three years, before carefully fermenting and maturing them for over 120 days.
