A sake from a Kimoto-style brewery, featuring fruity sweetness and a fresh acidity typically associated with fruit. This sake combines fruity acidity with a delicate aroma and is aged in oak barrels that previously held red wine. Its name ("fragrant mountain") alludes to a poet who was once inspired by the scent of blooming mountain cherry blossoms. The acid-forward yeast strain and aging in former red wine oak barrels lend it a soft, rounded mouthfeel. The aroma remains gentle, and it flows smoothly across the palate.

Founded in 1711, Niida Honke marked its 300th anniversary in 2011 — the same year disaster struck. While his family evacuated, 18th-generation brewer Yasuhiko Niida stayed behind alone and turned to organic, self-sustaining sake brewing rooted in local rice, native yeast, and chemical-free farming by inviting local organic farmers to grow sake rice instead, building a future the whole region could share.
