About product

A lightly cloudy, unpasteurized sake made using Omachi rice cultivated by Koichi Nemoto in the Odaka Ward of Minamisoma City, Fukushima Prefecture. This sake is carefully brewed using the traditional kimoto method. The presence of fine lees enhances the soft umami characteristic of Omachi, adding a fresh, vibrant quality typical of namazake. The effervescence is gentle, ensuring the sake feels light rather than heavy despite its cloudiness. It offers a refined flavor profile with a pleasant, gentle sweetness and refreshing acidity that makes it incredibly easy to drink.

NIIDA / ODAYAKA

Founded in 1711, Niida Honke marked its 300th anniversary in 2011 — the same year disaster struck. While his family evacuated, 18th-generation brewer Yasuhiko Niida stayed behind alone and turned to organic, self-sustaining sake brewing rooted in local rice, native yeast, and chemical-free farming by inviting local organic farmers to grow sake rice instead, building a future the whole region could share.
