A powerful, rich Junmai Genshu with an amber hue and a creamy texture. The bouquet is reminiscent of toasted grains and mirin, accompanied by a delicate note of raisin. On the palate, concentrated sweetness and deep umami combine with the smooth acidity characteristic of the Kimoto method; this lends the sake definition, ensuring it never feels heavy despite its richness. The finish is long, featuring gentle sweetness and a fine astringency. In 1967, Niida Honke launched Japan’s first sake produced without pesticides or chemical fertilizers. Today, the brewery produces exclusively Junmai sake using naturally grown rice, the Kimoto method, and its own proprietary yeast. The four-step "kumidashi yondan" process fully brings out the sake's sweetness and umami.

Founded in 1711, Niida Honke marked its 300th anniversary in 2011 — the same year disaster struck. While his family evacuated, 18th-generation brewer Yasuhiko Niida stayed behind alone and turned to organic, self-sustaining sake brewing rooted in local rice, native yeast, and chemical-free farming by inviting local organic farmers to grow sake rice instead, building a future the whole region could share.
