A Junmai Genshu with a strikingly fresh, sweet-and-sour character. Robust umami and subtle sweetness balance the acidity, resulting in a finish that remains clear and lively. Whether served well-chilled or slightly warmed, it makes for an exciting accompaniment to rich or spicy dishes. Niida no Gosan ("Niida’s Miscalculation") came about through an unexpected fermentation: acidity levels rose above 5, whereas sake typically averages around 1.3. Yet, upon tasting, it was precisely this acidity that impressed: sweet-and-sour, fresh, and underpinned by robust umami. Produced using the Kimoto method, without added yeast.

Founded in 1711, Niida Honke marked its 300th anniversary in 2011 — the same year disaster struck. While his family evacuated, 18th-generation brewer Yasuhiko Niida stayed behind alone and turned to organic, self-sustaining sake brewing rooted in local rice, native yeast, and chemical-free farming by inviting local organic farmers to grow sake rice instead, building a future the whole region could share.
