Doburoku is one of Japan’s oldest alcoholic beverages, with a history as long as rice cultivation itself. It is brewed from the same basic ingredients as sake: rice, water, and koji. The key difference is that the resulting mash (moromi) is not pressed. In ancient times, farmers would offer rice and Doburoku as a tribute to the gods, praying for a bountiful harvest— a tradition that continues in many regions to this day.
