This Junmai Daiginjo from the Ryuou Yamadanishiki "Blue Series" is made from rice grown in the region and processed on-site. Ryuou lies in a basin surrounded by mountains that run east to west. The rice fields extend from the plains, over foothills, to riverbanks. These diverse soil types (clay, silt, sand, gravel, and mixed soils) influence rice cultivation and result in diverse characteristics that are reflected in the quality of the rice. Honeydew melon and yellow ripe fruit on the nose, with mineral notes of granite and wet stone in the background. The minerality emphasises the clear structure on the palate.

 

Location type (Yamanaka): The terrain at the foot of Mount Kagami is characterized by hard granite. The soil there is silty and mixed with pebbles and sand, as well as a large amount of quartz sand resulting from the weathering of the granite. This natural drainage creates the ideal soil for tender, light rice with a relatively firm texture.
