This Junmai Daiginjo from the Ryuou Yamadanishiki "Blue Series" is made from rice grown in the region and processed on-site. Ryuou lies in a basin surrounded by mountains that run east to west. The rice fields extend from plains to foothills and riverbanks. These diverse soil types (clay, silt, sand, gravel, and mixed soils) influence rice cultivation and result in diverse characteristics that are reflected in the quality of the rice. The Yamada-Nishiki rice used for this rice is grown in Kayochou, where the loamy soil promotes optimal growing conditions. This promotes a gentle yet solid heaviness in the sake. Fresh flavours of pear and melon combine with a soft texture on the palate, ensuring a lingering finish.

Location type (Kayochou): In Kayochou, clay soil is typical of the area. The marshland south of the brewery, crisscrossed by streams, is characterised by fine-grained clay. The dark, sticky soil retains water and fertilizer for extended periods, creating ideal conditions for the production of particularly round and soft rice.
