This Junmai Daiginjo from the Ryuou Yamadanishiki "Blue Series" is made from rice grown in the region and processed on-site. Ryuou lies in a basin surrounded by mountains that run from east to west. The rice fields extend from plains, over foothills, to riverbanks. These diverse soil types (clay, silt, sand, gravel, and mixed soils) influence rice cultivation and result in diverse characteristics that are reflected in the quality of the rice.

 

Style: This sake impresses with delicate fruit flavors of honeydew melon and grapefruit with a subtle green hue. The rice grows on fertile loamy soil mixed with river sand. It is characterised by a lighter texture, which gives it an elegant and lingering flavour.

Location type (Hashimoto): The Hashimoto region is characterised by sandy loamy soil. In this area, crisscrossed by narrow streams, the clay soil is similar to that of Kayochou, with admixtures of river sand and small stones. A slight gley content in the soil provides slightly better drainage than in Kayochou. The result is round rice with a tender texture.
