AZOLLA is a vivid expression of Matsunotsukasa’s deep respect for its raw material—sake rice—and the environment that nurtures it. Rooted in the rural village of Ryuo in Shiga Prefecture, this organic Junmai Ginjo is made exclusively from Yamadanishiki rice cultivated by our dedicated contract farmers. Grown in healthy fields without the use of agricultural chemicals or synthetic fertilizers during the growing season, this sake is a testament to sustainable farming and the bond between people and land. AZOLLA opens with a burst of elegant aroma on the palate, followed by a refined, smooth flavor that remains rooted in the strength and character of the original rice. It captures the essence of Ryuo—its people, its nature, and its brewing heritage—shaped by generations of tradition. The name Azolla refers to a small aquatic fern that naturally grows in rice paddies and lakes. By covering the water’s surface, it blocks sunlight to suppress weeds, offering a natural alternative to chemical herbicides—an emblem of harmony between agriculture and ecology.
