To produce KUHEIJI, the Banjo Brewery, which has been producing sake since 1647, carefully cultivates its rice in its fields in Nagoya, Kurodashō. "Kuheiji" is a professional name passed down with each new generation; the current master brewer, Kuheiji Kuno, is the 15th holder of this title. This sake perfectly expresses the strength, richness, and mildness of the Omachi rice variety, one of Japan's oldest rice varieties. The gentle aroma reveals notes of green grass, grains, and botanicals. On the palate, a delicate carbonation reminiscent of young wine unfolds, with a slight bitterness, like biting into a citrus peel. Over time, the bitterness mellows, and the aroma of tropical fruits, such as ripe bananas, becomes more pronounced.
