To produce KUHEIJI, the Banjo Brewery, which has been producing sake since 1647, carefully cultivates its rice in its fields in Nagoya, Kurodashō. "Kuheiji" is a professional name passed down with each new generation; the current master brewer, Kuheiji Kuno, is the 15th holder of this title. "Ka no Chi," from the Collection series, literally means "to take you far in time." True to its name, this sake only reveals its full potential with ageing.This sake combines the freshness of pears and strawberries with a hint of white pepper. The soft texture and fruity freshness on the palate are complemented by a pleasant acidity that lingers in the aftertaste. Over the first five years, this sake develops strongly, revealing flavors of ripe banana and melon, giving it impressive depth. Ageing for at least one year is recommended to achieve its full potential.
