To produce KUHEIJI, the Banjo Brewery, which has been producing sake since 1647, carefully cultivates its rice in its fields in Nagoya, Kurodashō. "Kuheiji" is a professional name passed down through each new generation; the current master brewer, Kuheiji Kuno, is the 15th holder of this title. This flagship sake, "Eau du Désir" (water of hope), is distinguished by its expressiveness and elegance. With aromas of melons and almost ripe peaches, complemented by spicy notes such as caraway, it develops a multi-layered flavour. On the palate, it offers a complex blend of ripe, fruity notes and the bitterness of lightly squeezed citrus fruits, while a well-balanced acidity underpins the overall flavour and leads to a lingering aftertaste.
