About product
Spontaneous fermentation. Unfiltered sake brewed according to the ancient, traditional kimoto method. It has a beautiful amber hue due to the fermentation in a Japanese cedar barrel (kioke) and the high polishing rate (little polishing). The 2018 vintage sake has long ageing potential. A dry, powerful, and complex sake with a caramel-like aroma of dried fruits, honey, mushrooms, nuts, coffee, and cinnamon. A dense rice umami spreads on the palate. A spicy and lingering, slightly smoky finish. It has a balanced complexity.
