Spontaneous fermentation. Unfiltered sake brewed according to the ancient, traditional kimoto method. It has a beautiful amber hue due to the fermentation in a Japanese cedar barrel (kioke) and the high polishing rate (little polishing). The 2018 vintage sake has long ageing potential. A noble, complex sake with a honey-like aroma of dried fruits, nuts, and butter. On the palate, a multi-layered, noble sweetness and a long, slightly smoky aftertaste spread. It has a balanced complexity.
