A Junmai Daiginjo sake brewed according to the traditional, very elaborate Kimoto method, with a special depth. A strong and complex structure with the power of the sun. "Hiwata" stands for round fields whose grain is sacrificed to the ancient gods. A silky-creamy texture and a fresh, fruity aroma (exotic fruit) harmonise with a pleasantly soft acidity, well-built body, rice umami and a full-bodied finish.

Using soft spring water from Reidozawa, owned by the brewery, they prioritize locally grown rice, preserving the terroir.
