Hanatomoe "Nature x Nature" White is a kijo-shu (sparkling sake) type. Sake brewed according to the traditional Yamahai method is added instead of water, resulting in a more concentrated sweetness. Spontaneous fermentation ensures its complexity. The straw-yellow hue and complex flavour arise from fermentation in a Japanese cedar barrel (kioke) and the high polishing rate. This sake presents a surprisingly beautiful and complex aroma. It is the result of fermentation with natural yeasts. Its flavour is characterised by nuances of butter, bread, biscuits, nuts, and, most notably, a rounded acidity and umami note with hints of mild honey and light caramel. It is ideal for European meat dishes and also as an alternative to sweet wines.
