Heiwa Shuzou is a family-run brewery located in the picturesque town of Kainan, Wakayama Prefecture—an area blessed with abundant natural resources, from crystal-clear spring water to fertile land ideal for growing high-quality rice. Nestled between mountains and coastline, the region’s mild climate and pristine environment provide perfect conditions for sake brewing. Founded in 1928, Heiwa Shuzou combines tradition with innovation, producing sake that is both expressive and approachable. Their philosophy emphasizes craftsmanship, sustainability, and a deep respect for the local terroir. These values are reflected in their flagship brand, KID and TSURU UME, which has earned acclaim for its elegant, well-balanced flavor profile. Natsu Mikan is a citrus fruit native to Japan that can be harvested in early summer and is characterised by a higher acidity than mandarins. "Tsuru-Ume" was produced with high-quality fruit from Wakayama prefecture. "Tsuru-Ume" was produced with high-quality fruit from Wakayama prefecture. Through direct collaboration with the farmers, the Heiwa Brewery has access to a selection of the country's finest fruit. Made with ripe and selected Nanko plums from Kishu (Wakayama prefecture) andmatured in wooden barrels under the best care. All kinds of expertise and preservation times are required here. As it is only bottled from barrels, a rich flavour and fruity aroma can be enjoyed. The plum wine is matured for more than three years in various barrels, including whisky, rum, bourbon and sherry.
