Bunkajin Sake is a distinguished brand from Arisawa Shuzo, a family-owned brewery founded in 1880 in Kōchi Prefecture. Led by the 5th generation, Kōsuke Arisawa, the brewery is renowned for producing high-quality sake, including the award-winning Bunkajin, which has earned the Gold Medal at the National New Sake Competition. Bunkajin is crafted using traditional methods, such as slow pressing over three days to preserve its purity and smoothness. The sake undergoes careful heat treatment in bottles and rapid cooling to maintain its freshness. Located in the lush, historic Kamimachi region, Arisawa Shuzo draws inspiration from its rich local terroir. The name Bunkajin is inspired by a local legend tied to the Nonaka Shrine, which honors a historical figure known for her wisdom and strength. "Bunkajin Junmai" is coarsely filtered and the extract condensed, resulting in a pleasant density. It owes its spicy fruitiness to the "Akebono" rice variety. It only reaches its full potential with careful decanting. Dry, fruity aroma (melon, pineapple, yuzu citrus), elegant acidity, rice umami, develops wonderful complexity in the glass, lasting finish.
