The Shouro distillery is the birthplace of Miyazaki yeast, which is widely used in shochu distilleries in Miyazaki. With such a long history, the Shouro distillery continues to strive to maximise the effectiveness of its yeast to best bring out the flavour of the raw materials used. This is the second shochu in the ‘Genshu’ series. It was distilled in 2004 and matured for a long time. The name ‘Genshu’ indicates that it has not been diluted. It has a pleasant aroma of steamed rice and vanilla. On the palate, a gentle umami note, slightly spicy with hints of cinnamon, reminiscent of Earl Grey tea. The complex maturation gives it a long-lasting finish.
