Naohiko Noguchi, one of Japan’s most legendary toji (master brewers), has been brewing sake for over 70 years and is widely known as the “God of Sake Brewing.” After a two-year break, he returned to the craft in 2017 with the founding of a new brewery in Ishikawa Prefecture bearing his name. This brewery was established with the vision of passing on the craftsmanship, spirit, and philosophy of sake brewing to future generations. In addition to his renowned sake, Mr. Noguchi also produces a sake kasu shochu — a spirit distilled from the sake lees (sakekasu) left over from the brewing process. Traditionally, sake kasu shochu has been made in sake-producing regions as a way to honor and fully utilize the raw materials, and it holds a deep-rooted place in Japan’s sake culture. At the Noguchi Naohiko Sake Institute, the shochu is carefully distilled under low pressure to preserve the delicate and fruity aroma reminiscent of ginjo sake. Elegant and versatile, this shochu offers a smooth, rice-derived flavor with a clean finish. It can be enjoyed neat, on the rocks, with water or soda, as a digestif, or as a refined base for cocktails.
