The Toyonaga Shochu distillery is located in Kumamoto Prefecture in the Kuma Basin, which is surrounded by mountains on all sides and is also the source of the Kuma River. Since 1986, the distillery has been producing shochu from organic rice to ensure sustainable organic cultivation. They also base their planting and harvesting cycles on the lunar calendar. Kuma Shochu was awarded the Geographical Indication (GI) designation in 1995. Distinct aroma of rice wafers, cinnamon, cocoa and nuts obtained from atmospheric distillation. Cocoa and mushrooms on the palate. Complex, pleasantly sweet and spicy-sweetish finish. Also recommended as a base for homemade plum wine.
