The ageing process makes Awamori more complex, giving it an elegant and wonderfully mature aroma of vanilla and cocoa. On the palate, the essential oils create a delicate melt and a creamy texture. Subtle sweetness paired with a peppery, spicy flavour with sweet notes on the finish, reminiscent of dried fruit and caramel. Choju Densetsu is a limited-edition Kūsū (‘aged awamori’) that is aged over an extended period of time in kamuiyaki pots using the traditional shitsugi method, which is similar to the solera system used to age sherry. In this method, the oldest awamori is used first; then its pot is refilled with the second oldest awamori, and its pot is in turn replaced with awamori from the next oldest, until the pot of the youngest aged awamori is refilled with freshly produced awamori. At least 10 years of Kūsū is added to at least 7 years of Kūsū in Choju Densetsu Silver.
