The long ageing process makes Awamori softer and more elegant. Aromas reminiscent of vanilla and caramel mingle to create a wonderful fragrance. On the palate, it has a silky smooth texture, with a subtle sweetness and aromas reminiscent of dried fruit and caramel, and a pleasantly long finish. Take time to savour the ever-changing aromas in the glass. Choju Densetsu is a limited-edition kūsū (‘aged awamori’) that is aged over time in kamuiyaki pots using the traditional shitsugi method, which is similar to the solera system used to age sherry. In this method, the oldest awamori is used first; then its pot is refilled with the second oldest awamori, and its pot in turn is replaced with awamori of the next oldest, until the pot of the youngest aged awamori is refilled with freshly produced awamori. For Choju Densetsu Gold, Kūsū that has been aged for at least 10 years is added to Kūsū that has been aged for at least 20 years.
